Does this work good at filtering saliva?

The included carbon filters aerate, pump and filter out dust particles, debris, and saliva as well.
Does the pump have a low water sensor and an automatic shutoff to save it from burning up?

This pump does not have automatic shut off mechanism. It must be unplugged before putting on or taking off parts and before cleaning.
Can this fountain be used on an existing bowl? I need an elevated bowl for my older dog, but have limited space to put food and water bowls in my house, so it would work best if I can just place it in my existing elevated bowls.
