Does this product also serve as a pepsin? If so which ingredient does that?

Pepsin is an enzyme that comes from animals such as pigs and cows. Total-Zymes® only uses enzymes that are sourced from non-animal sources, plants or fermentation. Total-Zymes® contains 5 different enzymes that offer proteolytic activity, meaning protein digesting. Protease 6.0, Protease 4.5, Protease 3.0, Peptidase, Bromelain. These non animal enzymes offer better digestion with none of the bad side effects like allergic reactions to pork products.
How much is used for canned food? I use 1/2 can (12.5 oz) twice daily

Are any of these enzymes made from Aspergillus or any other types of mold?

Some of the enzymes are produced from fermentation that uses a small amount of Aspergillus oryzae. Aspergillus oryzae is not a mold, but rather a fungus. It plays a pivotal role in Asian food manufacturing. After the fermentation process is done, the enzymes are harvested and the finished enzyme product contains absolutely none of the Aspergillus oryzae. Thus the enzymes are not made from Aspergillus oryzae, but this safe and valuable microorganism is involved in the fermentation and production of food enzymes.They are approved by AAFCO and also the NASC (National Animal Supplement Council)
