Are the lightweight, middleweight and heavyweight versions different hardness of material? It appears they have different shaped protrusions and different sizes based on the "weight" but I can't tell about the hardness of material.

The different weights is the sizes suitable for the breed size. The Lightweight is suitable for Small breeds, the Middleweight is suitable for Medium breeds, and the Heavyweight is suitable for Large and Giant breeds.

Can you put kibble in grooves?

Lightweight, but durable. My pitty loves carrying this around and doesn't seem to bite through it like he does some other toys meant for chewing. Know that it isn't like a Kong with thickness and meant for crazy chewers. The last one we had lasted for ~6 months before he worked the rubber enough for it to soften to the point he ate through it. However, he doesn't attack this toy like he does others.
