What makes this food labeled 1-6? I have an older dog with digestive issue

This Hill's Science recipe is formulated to meet the nutritional levels established by the AAFCO Dog Food Nutrient Profiles for maintenance of adult dogs. It is not recommended for dogs 7 years or older, since older dogs have different nutritional needs.
Why does a dog need ground pecan shells? Also, what is chicken liver "flavor" & pork "flavor"? It's not real chicken liver and pork?

Ground Pecan Shells are used as a source of fiber. Chicken Liver Flavor is a palatability enhancer made from hydrolyzed chicken livers. It is also a source of protein. Pork Flavor is a palatability enhancer. It is also a source of protein.
